Tolleson + Classic French batard.

Fresh yeast seems to have made a difference (the old stuff was 2 years out of date). Still think our oven is hotter than it indicates (thermometer is en route from Amazon). Lighter hand yielded bigger, more uneven bubbles this time, but not perfect.
