I'm not exaclty sure, but I think it's still cooking when you take it out, so it needs to finish. I'm cutting it as soon as my wife gets home. It's still warm.

@mynameisjason - Well, the starch inside is very hot, almost liquid. If you cut it when it's really hot, it would just get mangled. Once it cools, the starch sets becomes firm, thus easier to cut.
