Brewing a Weizenbock at Mike's today. 36lbs of grain, we had about 2 gallons too much sparge water, so we're using that extra to make yeast starters.

I quote Charles Papazian: "Relax, have a home brew." It's ok to over-sparge a weizen beer because wheat doesn't have a husk, therefore your chances of extracting tannins are far lower.
