The bag is a malted grain. You cook it until the starches convert to sugar and then feed the sugar to yeast and they poop out CO2 and alcohol (and a bunch of other stuff, but the CO2 and alcohol are the biggies).
I don't really have a specialty, but I do like to make hoppy pilsners (so they end up not really being pilsners) and ESBs.
Periodically I try to make gluten free beers because my boo is gluten intolerant. Theses are generally failures, although I made a sweet potato beer once that was sort of drinkable.
