@Poe - I've been brewing extract beers so far but have acquired the equipment needed to go all-grain whenever I decide to make my life even more complicated. haha. I'm primarily a pale ale guy but am expanding my palate and just brewed a darker, holiday-type ale.

Extract is a great way to learn the ropes, indeed. A partial mash plus extract is also a good way. Have you done any dry hopping of your pales?
